1 Bottle 100 ml - 3,38 fl.oz - of Traditional Balsamic Vinegar from Modena PDO aged at least 25 years - Acetaia Malpighi + tic doser Originally conceived as a cordial to sip from liqueur glasses after meals, with time it has found uses in the menus of the grat international chefs from appetizers to desserts. It is suitable for strong, well-flavoured and spicy cheeses, for fruit salads with fruits of the forest, strawberries or cherries, for custard cream and ice-cream, for panettone or strudel. A typical quantity per portion is normally a teaspoonful. It's obtained from the must of characteristic Modena grapes. The must, slowly cooked on an open fire in open vessels, is concetraded so as to reduced to one third of its initial volume. Thereupon, in house attics, while resting in its dwelling of casks, it faces the eat of summers and the rigors of winters. The casks come in series of decreasing sizes and of varius woods: oak, mulberry, chestnut, cherry, and, at times, juniper.
