Our Maine high mountain olive is not your ordinary Olive Tree from the Middle East. Our High Mountain Olive has adapted to the cold climate of Maine. The tree produces very small olives BUT Maine high mountain olive wood chips has a very large wood smoke for grilling lamb, beef, or poultry. Maine's high mountain olive produces a smoke that lands somewhere between the nutty smoke of hickory and the much more robust smoke of mesquite. Our high mountain olive wood chips are easy to use on a propane, electric, or charcoal grill or smoker. For grill use, a durable cast iron smoker box makes life a lot simpler. Just fill the smoker box and place directly on the grill surface or heat deflectors if you have the room. As for charcoal, toss a handful directly on the ready coals just before you start your grilling. Our high mountain olive wood chips are packed in 10lb or 33lb boxes
